Ranch Dressing

Looking for a creamy, dairy-free alternative to classic ranch dressing? This recipe is a game-changer! Made with soft silken tofu, fresh lemon juice, apple cider vinegar, and sweetened with dates, it’s both fresh and delicious. The blend of garlic, red onion, green onions, parsley, and dill creates a flavour profile that rivals traditional ranch, making it a perfect dressing for salads, dipping veggies, or drizzling over your favorite dishes.

Serves: 2 cups

Ingredients

  • 1 cup Soft silken tofu
  • ¼ cup Fresh lemon juice
  • ¼ cup Apple cider vinegar
  • 2 Dates, soaked in hot water for 15 minutes
  • ½ cup Water
  • 2 cloves Garlic, minced
  • 2 tbsp Red onion, minced
  • 1 tbsp Green onions, finely chopped
  • 1 tbsp Fresh parsley, finely chopped
  • 1 tsp Fresh dill, finely chopped

Preparation

  1. In a blender, add all ingredients except the fresh herbs. Blend until smooth, about 4 minutes.
  2. In a medium bowl pour dressing, stir in remaining ingredients and serve immediately or store in the fridge for up to 2 days.

Notes:
If you wish to store the dressing for a longer period of time (4-5 days), add onion and fresh herbs in before service and swap the fresh garlic for ½ tsp garlic powder.
