Avocado Fries

These avocado fries are about to be your new best friend. Coated in a seasoned breadcrumb mixture and baked to golden perfection, these avocado fries are the creative party appetizer you have been looking for.

Ingredients
- 4 each Avocado, large, pitted and peeled
- ½ cup (75 g) Flour, all-purpose
- 1 cup (250 ml) Soymilk
- 1 ¼ cups (310 ml) Panko breadcrumbs
- 1 tbsp (15 ml) Cajun seasoning
- 2 tbsp (30 ml) Oil for baking, optional
Preparation
- Preheat oven or deep fryer to 425˚F (220˚C). If baking, line a baking sheet with parchment paper.
- Cut each avocado into eight pieces lengthwise.
- In a medium bowl, combine flour and Cajun seasoning.
- Set up the remainder of the breading station with flour mix, soy milk and panko breadcrumbs in separate bowls.
- Next, coat each piece of avocado with flour mix, then soymilk, then panko breadcrumbs ensuring each piece is well coated.
- Bake or fry until golden brown and crispy.
a. If frying, deep fry until golden brown, about 1 ½ to 2 minutes.
b. If baking, spray or drizzle each piece with olive oil and bake until golden brown and crispy, approximately 10 minutes, turning halfway through for even browning.
